80 and Sunny

80+ and sunny…in Chicago…on April 10…hellooooo Spring!  This weekend went by way too fast…we went to the dog beach with Ruby yesterday for her first visit and if she could talk, I’m pretty sure she would have said “Best Day EVER!”.  All she did was run…up and down the beach, in circles, everywhere…all with her Wubba in her mouth!  Once she gets a toy she hangs on to it for dear life doesn’t let anyone (or any dog) take it away.  She didn’t even need it me to throw it to her, it was like she was playing fetch with herself…just too funny.

After the beach it was naptime…until we headed over to our friends’ place for dinner…and a lively game of Things.  This game is AWESOME and I strongly recommend to go out and buy this right away, along with a bottle of wine, and round up a group of friends who have a good sense of humor.  We were playing with 4 guys that have no shame, so it made for an even more entertaining time.

This afternoon Mike were out and about in Lincoln Park for a few hours then it was just a nice, relaxing day at home.  Read:  I was super lazy and didn’t feel like cooking or doing anything.  Now its time to catch up on some DVR and get to bed early…last week of bootcamp starts tomorrow morning!  Lately I’ve been pretty busy so I haven’t gotten a chance to blog as much as I’d like, I don’t want my blog to become a chore so I’m just going with the flow and if I have time to post I will, if I don’t-well, it might be a little longer before you get to read about my oh-so-interesting life!  Hope everyone has a great week and hope this awesome weather sticks around!

Sweet and Savory

Morning!  Hope everyone is having a great weekend!  I’ve got boot camp measurements in a couple hours—>nervous!  This week I’ve been pretty random with my eats, I’ve been craving Peanut Butter, Fried Eggs, and Fried Rice….weird, right??  I’ve really just been craving Sweet & Savory combos!  Of course I had some Overnight Oats a couple mornings, but my latest favorite breakfast mix-up is a PB&J omelet.  Yes, you read that correctly.  A girl that wants a PB&J sandwich but has no gluten free bread on hand has to do something!

Delicious, trust me!  Now, to handle my fried egg cravings I’ve basically been putting them on top of everything…

An over easy, perfectly runny, fried egg on top of Trader Joe’s vegetarian Fried Rice…I’m obsessed!

On Friday Mike and I had a date night {yay}!  We went to Local Option in Lincoln Park and it was awesome!  I had read some Yelp reviews and wanted to try it out, little did I know Mike had also been wanting to try it out for awhile too!  The real draw of the place is their obscure beer menu-tons of oddball, rare batch microbrews-not cheap but well worth it!  And their food menu ain’t all that bad either!  Mike enjoyed his dark stouts and a shrimp po’ boy and I enjoyed a Blackened Chicken Salad with Raspberry Vinaigrette-very good-super fresh and super tasty!  After dinner we went to see Limitless…as Mike put it “its as good as a movie about a magic pill that makes you use all of your brain can be”, but I still liked it…and let’s be honest-Bradley Cooper is not too bad on the eyes!

Local Option Blackened Chicken Salad

Apparently this was the weekend of microbrews and blackened chicken because last night we ate out at the Yard House, a chain restaurant in Glenview with a massive food menu….and over 100 beers on tap.  Mike and I love coming here, mainly for the awesome beer selection, but since I’m in boot camp my trip here was a little different than usual-can you refill my water please??  Their food isn’t exactly the healthiest either, but I checked out their website beforehand so I was prepared.  They have a menu with nutritional info so I chose what I wanted before arriving-avoiding temptation by the massive plates of fried foods walking by.  I ordered their Chopped Salad-minus the bacon and dressing, plus blackened chicken breast and romaine.  I brought a bottle of Annie’s salad dressing in my purse and poured my own on top!  I loved it!  We also treated ourselves to some Mango Sorbet for dessert…it tasted like the freshest of fresh mangos-so good!

I’m thinking I’m going to stick with my “blackened” theme this weekend and make some Blackened Salmon tonight, I don’t have my own blackening seasoning recipe yet so I’ll have to see what I can come up with!   Time to go get measured, wish me luck!
